A must have side dish for Mexican themed dinner menu

Elevate from refried beans to this amazingly flavorful and easy to make Charro (Cowboy) Beans!

As a family we like to have themed dinner nights to celebrate birthdays. I make homemade salsa, shrimp ceviche and Charro Beans for some of the sides. This bean dish is a favorite and must have for our Mexican themed dinner.


6 Slices of bacon - cut into small pieces.

1 white onion - cut into small dice.

1 Jalapeno (or more to taste) – cut into small dice, removing seeds.

3 cloves of minced garlic

3 Roma tomatoes – cut into small dice.

1 bunch of cilantro – chopped into small pieces.

2 48oz Cans of Pinto beans

2 T Knorr Chicken flavor Bouillon – CALDO CON SABOR DE POLLO

In a large pot cook the bacon until almost crispy then add the onion, garlic, jalapeno, and tomatoes until soft. Then add the cilantro, stir well. Add the beans and chicken bouillon. Stir well and simmer for 30 minutes and serve. I transfer the beans to a crockpot to keep them warm on low for serving.
